1 1/4 cups all purpose flour<br />

1 cup rolled oats<br />

1/2 cup firmly packed brown sugar<br />

1/3 cup unsweetened cocoa<br />

1 tbsp baking powder<br />

1 cup mashed bananas (about 3 small)<br />

1/2 cup soy milk<br />

5 1/3 tbsp margarine, melted<br />

1 tsp vanilla<br />

Preheat the oven to 400F. Line 12 medium muffin cups with paper baking liners.<br />

Combine the flour, oats, brown sugar, cocoa, baking powder and baking soda in a large bowl. In a<br />

medium bowl, combine the mashed bananas, soymilk, margarine and vanilla. Add the banana mixture to<br />

the dry ingredients and stir until just moistened.<br />

Spoon the batter into prepared muffin cups and bake for 20 to 25 minutes until a toothpick inserted into<br />

the centre of the muffins comes out clean. Cool on a wire rack.<br />

Cream of Celery Soup<br />

1/2 cup (1/4 lb) chopped onion<br />

4 cups (1lb) chopped celery<br />

2 cloves garlic, minced<br />

1/2 tbsp olive oil<br />

2 cups vegetable stock or water<br />

1 1/2 tsp salt<br />

1/4 tsp dill<br />

1 cup soymilk<br />

green onions, chopped, or fresh dill to garnish<br />

Sauté the onion, celery and garlic in the oil. Add the stock and simmer until soft.<br />
