450g / 1lb fresh spinach, washed<br />

225g / 8oz frozen peas, defrosted<br />

850ml / 1 ½ pints vegetable stock<br />

3 tbsp freshly chopped mint<br />

150ml / ¼ pint warmed soya cream, or soya yoghurt or soya milk<br />

Method<br />

In a large saucepan, heat the margarine over a medium heat, add the onion and cook until softened<br />

(about 5 minutes).<br />

Shred the spinach, add to the pan and stir until it wilts. Add the peas and stir again. Gradually add half of<br />

the stock, stirring, and bring to the boil. Simmer for 5 minutes, stirring occasionally.<br />

Puree the soup in the blender. Return to the pan and add the chopped mint and stir for a further 2<br />

minutes, then add the rest of the stock and heat it through.<br />

Remove the pan from the heat, stir in the soya cream and reheat soup gently. Serve garnished with fresh<br />

mint leaves and some croutons.<br />

2 medium onions, chopped<br />

1 clove garlic, chopped<br />

2 tbsp vegetable oil<br />

225g / 8oz flat mushrooms, chopped<br />

450g / 1lb vegetarian chunks or veggie burgers, cubed<br />

1 tsp fresh thyme<br />

900ml / 1 ½ pints gravy<br />

2 tbsp soy sauce<br />

1 tbsp balsamic vinegar<br />

salt and pepper to taste<br />

350g / 12oz puff pastry<br />

soya milk to glaze<br />
