“Nearly 70 tons <strong>of</strong> these products are manufactured per<br />
month by Soy Production <strong>and</strong> Research Association–a non<br />
pr<strong>of</strong>i t <strong>and</strong> charitable organization established in 1971. It is<br />
a joint venture <strong>of</strong> Nave Technical Institute, Shahjahanpur<br />
<strong>and</strong> G.B. Pant University <strong>of</strong> Agriculture <strong>and</strong> Technology,<br />
Pantnagar. It is the fi rst organization in India, producing <strong>and</strong><br />
marketing high protein <strong>soy</strong> foods in the country. Nutrinugget<br />
<strong>and</strong> Protesnac cater to the consumer market whereas Protein<br />
plus, Paustic Ahar <strong>and</strong> Nutri Ahar are particularly suited<br />
for ever exp<strong>and</strong>ing institutional feeding programs. In view<br />
<strong>of</strong> the great dem<strong>and</strong> on these products the capacity is being<br />

• Summary: This full-page black-<strong>and</strong>-white ad (see<br />
next page) lists the company’s <strong>soy</strong> products, iced herbal<br />
beverages, <strong>and</strong> baked goods & pastries. Soy products<br />
include: Baked t<strong>of</strong>u, Marinated t<strong>of</strong>u, Caraway t<strong>of</strong>u, T<strong>of</strong>u<br />
chip dip, Soy melk (sweetened & carob), Soy shakes (carob,<br />
vanilla & strawberry), So<strong>yogurt</strong> (a cultured <strong>soy</strong> product),<br />
Wholegrain <strong>soy</strong> burgers. Baked goods include: T<strong>of</strong>u<br />
cheesecakes, Carob maple swirl, Mary’s cream cake, Mary’s<br />
devil’s food cream cake–”<strong>and</strong> more to come.”<br />
On the top half <strong>of</strong> the ad is a large circular logo featuring<br />
a stylized swan, with two large wings symmetrical about a<br />
vertical axis <strong>and</strong> an arched neck on the left side. The <strong>other</strong><br />
half <strong>of</strong> the arch is drawn in to form a heart, inside <strong>of</strong> which<br />
is written “Because we love you.” Across the inside top are<br />
the large words “Swan Foods.” A full-color rainbow arches<br />
below them <strong>and</strong> over the swan. At the top center, between<br />
the words “Swan Foods,” are the smaller words “Nature’s<br />
Finest” written one below the <strong>other</strong>; between them is an<br />
infi nity sign.<br />
Across the bottom <strong>of</strong> the ad is written: “Every Swan<br />
Soybean Product contains all 8 essential amino acids (which<br />
are necessary for a balanced diet) <strong>and</strong> have no cholesterol.<br />

published in Alternatives magazine–which began publication<br />
in August 1976. In May 1998 Jeanne Janson <strong>of</strong> Coral<br />
Gables (near Miami) checked every issue! This full-page<br />
ad also appeared in the July/Aug. 1978 issue (p. 49) <strong>of</strong> this<br />
magazine. A half-page version <strong>of</strong> this ad appeared in the<br />
March, April, May, June, September, October, November,<br />
<strong>and</strong> December 1978 issues <strong>of</strong> this magazine. Thus Swan<br />
Foods has an ad (at least half-page in size) in every issue <strong>of</strong><br />

• Summary: “A processed cheese-like product containing<br />
<strong>soy</strong> cheese as a part <strong>of</strong> the major ingredient is made by<br />
adding both a casein-containing substance derived from<br />
animal <strong>milk</strong> <strong>and</strong> a cheese emulsifying melting salt to natural<br />
<strong>soy</strong> cheese.” This mixture is then agitated under relatively<br />
high shearing conditions, while heating to a temperature<br />
<strong>of</strong> 85ºC for a period suffi cient to form the mixture into a<br />
s<strong>of</strong>tened, fl owable consistency. The product is pasteurized,<br />
then the s<strong>of</strong>tened mixture is run into a suitable container <strong>and</strong><br />
cooled. An excellent processed cheese results.<br />
“The natural <strong>soy</strong> cheeses used in the invention can be<br />
any conventional <strong>soy</strong> cheese which has a protein content<br />
substantially made up <strong>of</strong> <strong>soy</strong> protein <strong>and</strong> preferably is<br />
formed by fermentation <strong>of</strong> <strong>soy</strong> <strong>milk</strong> with a lactic acid cheese<br />
starter culture <strong>and</strong> forming a curd from the fermented broth<br />
