Bansei <strong>soy</strong>beans, the type Morse found most promising for<br />
making <strong>soy</strong>bean <strong>milk</strong>. “I wish to thank you for the bottle<br />
<strong>of</strong> Soy Acidophilus which one <strong>of</strong> your assistants brought<br />
to Washington a few weeks ago. I like this <strong>milk</strong> very much<br />
<strong>and</strong> am planning to use the <strong>acidophilus</strong> culture with some<br />

• Summary: It is now being asserted that <strong>soy</strong> bean <strong>milk</strong><br />
provides a new <strong>and</strong> more effective way <strong>of</strong> “introducing<br />
lactobacillus <strong>acidophilus</strong>, a friend <strong>of</strong> the human race, into<br />
the human body.” More than 20 billion <strong>of</strong> “these friends<br />
can be introduced, it is claimed, by swallowing a single<br />
tablespoonful <strong>of</strong> cultured bean <strong>milk</strong>.”<br />

• Summary: Contains recipes for: Baked <strong>soy</strong> bean<br />
s<strong>and</strong>wiches (using canned baked <strong>soy</strong> beans). “Soy<br />
<strong>acidophilus</strong> ice cream” (using 1½ Soy Acidophilus Milk, 2½<br />
cups cream, various fruit juices, rinds, <strong>and</strong> grated pineapple).<br />

• Summary: The author <strong>of</strong>fers a four-step plan which “has<br />
been found effi cient in the treatment <strong>of</strong> hundreds <strong>of</strong> cases<br />
requiring change <strong>of</strong> the intestinal fl ora.” These include:<br />
“1. Liberal carbohydrate feeding (Lactose, Dextrin, Lacto-<br />
Dextrin). 2. Discarding <strong>of</strong> fl esh meats (Combe) <strong>of</strong> all sorts.<br />
3. Increasing the activity <strong>and</strong> effi ciency <strong>of</strong> the colon so as to<br />
secure complete clearance <strong>of</strong> the intestinal tract at least once<br />
in twenty-four hours. 4. Liberal feeding <strong>of</strong> a potent culture <strong>of</strong><br />
L. <strong>acidophilus</strong>.<br />
In place <strong>of</strong> “animal proteins,” one should use “<strong>milk</strong><br />
<strong>and</strong> vegetable proteins.” Note that “<strong>milk</strong> proteins are less<br />
putrescible than are fl esh proteins, <strong>and</strong> besides are protected<br />
against putrefaction by the presence <strong>of</strong> lactose.” “The peanut<br />
<strong>and</strong> the <strong>soy</strong> bean supply a high percentage <strong>of</strong> protein <strong>of</strong> most<br />
excellent quality... The <strong>soy</strong> bean provides a basic protein <strong>of</strong><br />
high quality, <strong>and</strong> is rich in food minerals <strong>and</strong> vitamins <strong>and</strong><br />
has the added advantage that it stimulates the development <strong>of</strong><br />
the protective fl ora. This gives to the <strong>soy</strong> bean special value<br />
in efforts to change the fl ora by special feeding. All <strong>soy</strong> bean<br />
products are to be recommended, especially a <strong>milk</strong> prepared<br />
from this legume which closely resembles ordinary <strong>milk</strong> in<br />

appearance <strong>and</strong> composition.”<br />
Avoid all medical laxatives, which seriously interfere<br />
“with the effort to develop or implant a protective fl ora...<br />
Only purely physiologic means may be employed, such as<br />
liberal increase <strong>of</strong> bulkage (Kaba, psyllium seed, agar) <strong>and</strong><br />
the enema.”<br />

• Summary: “On inquiry <strong>of</strong> Dr. Allan Roy Dafoe you will<br />
learn that under his advice the quintuplets make daily use <strong>of</strong><br />
<strong>soy</strong> <strong>acidophilus</strong> <strong>milk</strong>, a preparation which has cured them<br />
<strong>of</strong> bowel trouble <strong>and</strong> keeps them free from this distressing<br />
ailment. For many months, under instruction from Dr. John<br />
Harvey Kellogg, who gave us the formula for making <strong>soy</strong><br />
<strong>acidophilus</strong> <strong>milk</strong>, we supplied the quintuplets with this<br />
preparation without charge <strong>and</strong> even paid the expense <strong>of</strong><br />
transportation by parcel post. For several months we have<br />
been supplying it at a nominal cost. Dr. Dafoe has mentioned<br />
the use <strong>of</strong> <strong>acidophilus</strong> in papers published in medical<br />
journals <strong>and</strong> the same fact has been broadcast through the<br />
newspaper press.”<br />
“We are anxious that <strong>other</strong> infants, thous<strong>and</strong>s <strong>of</strong> whom<br />
are dying <strong>of</strong> this same trouble every year, should have the<br />
benefi t <strong>of</strong> this most effi cient <strong>and</strong> practically unfailing remedy<br />
for this very common affection from which all bottle-fed<br />
babies are likely to suffer <strong>and</strong> with a mortality rate <strong>of</strong> ten<br />
times that <strong>of</strong> breast-fed infants.<br />
“We are preparing to introduce this preparation to<br />
both the pr<strong>of</strong>ession <strong>and</strong> the public end desire to refer to the<br />
experience <strong>of</strong> the quintuplets as evidence that the claims<br />
made for the preparation are valid.<br />
“Will you kindly write us whether we will be expected<br />
to pay a royalty for mentioning the fact that <strong>soy</strong> <strong>acidophilus</strong><br />
<strong>milk</strong> is used by the quintuplets <strong>and</strong>, if so, how much.”<br />
