Dr. Akintayo, a teacher in the PNUD project, answers the<br />

questions. Q–When <strong>and</strong> why was the UN International<br />

Volunteer Corps (journée Internationale des Volontaires)<br />

created? Ans:–the JIV was established in 1985 by the<br />

General Assembly <strong>of</strong> the United Nations. It has three main<br />

goals, but in each country the work must be suited to local<br />

needs. In Central Chari the main problem is malnutrition,<br />

especially <strong>of</strong> children. Dr. Akintayo is using the <strong>soy</strong>bean, a<br />

miracle plant, to fi ght this problem. Many different delicious<br />

foods, such as <strong>milk</strong>, <strong>yogurt</strong>, cheese [t<strong>of</strong>u], sojatine or <strong>soy</strong><br />

c<strong>of</strong>fee, oil, biscuits, bread, cakes, etc. can be obtained from<br />

<strong>soy</strong>a. These foods can greatly enrich the local diet.<br />

Q–What obstacles has production <strong>of</strong> <strong>soy</strong>a faced in<br />

Tchad? Ans: The <strong>soy</strong>bean was introduced to Tchad about<br />

20 years ago, because the peasants were interested in its<br />

production. Unfortunately this interest quickly disappeared<br />

because there was no market for the fi rst harvest. The many<br />

ways <strong>of</strong> using the <strong>soy</strong>bean <strong>and</strong> its benefi ts were unknown by<br />

the population at that time. This is one <strong>of</strong> the objects <strong>of</strong> our<br />

exposition.<br />

• Summary: “Abstract: Protein defi ciency is still a major<br />

problem in Africa particularly among the low income group.<br />

Soybean has the potential for alleviating malnutrition in<br />

African diets via <strong>soy</strong>bean based industries. The paper<br />

discusses the role <strong>of</strong> <strong>soy</strong>beans in the development <strong>of</strong><br />

<strong>soy</strong>bean based small <strong>and</strong> medium scale food enterprises in<br />

Nigeria. The IDRC funded <strong>soy</strong>bean utilization project jointly<br />

implemented by IITA <strong>and</strong> National Institutes in Nigeria has<br />

been successful through research extension activities, in<br />

developing several food uses for <strong>soy</strong>bean <strong>and</strong> disseminating<br />

these technologies to industries. Several people have<br />

received training on <strong>soy</strong>bean technologies <strong>and</strong> over fi fty<br />

industries are processing <strong>soy</strong>bean into weaning foods,<br />

breakfast cereal, extruded products, fermented <strong>soy</strong>bean<br />

products, <strong>soy</strong>bean soups <strong>and</strong> condiments. The success <strong>of</strong><br />

the <strong>soy</strong>bean project is based on dissemination <strong>of</strong> developed<br />

technologies on <strong>soy</strong>bean.”<br />

The role <strong>of</strong> International Institute <strong>of</strong> Tropical Agriculture<br />

(IITA) in international agriculture research (It was founded<br />

in 1976 at Ibadan): Soybean research at IITA as it focuses<br />

on nutrition in Africa, nutritional value <strong>of</strong> <strong>soy</strong>beans, <strong>soy</strong>bean<br />

processing, utilization, <strong>and</strong> dissemination model (product<br />

development research, training <strong>and</strong> extension activities,<br />

assessment <strong>of</strong> impact), development <strong>of</strong> household <strong>and</strong> small<br />

scale processing technologies, <strong>soy</strong>bean food options <strong>and</strong><br />

technology (<strong>soy</strong>bean beverages <strong>and</strong> ice cream, <strong>soy</strong>bean based<br />

baby foods <strong>and</strong> breakfast cereals, defatted cake processing<br />

<strong>and</strong> <strong>soy</strong>bean oil extraction using mechanical screw press<br />

technology: IITA concept, extrusion cooking: IITA concept,<br />

<strong>other</strong> advantages <strong>of</strong> extrusion processing). Impact <strong>of</strong> <strong>soy</strong>bean<br />

utilization project: Constraints in research, policies <strong>and</strong><br />
