tool for underst<strong>and</strong>ing the development <strong>of</strong> <strong>soy</strong><strong>milk</strong> <strong>and</strong><br />

related products from their earliest beginnings to the present.<br />

The bibliographic records in this book include 3,120<br />

published documents <strong>and</strong> 462 unpublished archival<br />

documents. Each contains (in addition to the typical author,<br />

date, title, volume <strong>and</strong> pages information) the author’s<br />

In May 1982 the fi rst study <strong>of</strong> the burgeoning <strong>soy</strong>foods<br />

industry in the Western world was compiled by Shurtleff<br />

<strong>and</strong> Aoyagi, <strong>and</strong> published by Soyfoods <strong>Center</strong>. In April<br />

1985 the fi fth edition <strong>of</strong> that book, titled Soyfoods Industry<br />

<strong>and</strong> Market: Directory <strong>and</strong> Databook (220 pages), was<br />

published. It contained statistics through 1984, the market<br />

size <strong>and</strong> growth rate for each <strong>soy</strong>food type, rankings <strong>of</strong><br />

leading <strong>soy</strong>foods manufacturers <strong>of</strong> each <strong>soy</strong>food type <strong>and</strong><br />

the amount each produced, analyses, trends, <strong>and</strong> projections.<br />

This book is published to update the 1985 market study.<br />

In the decade since 1984 the <strong>soy</strong>foods market has<br />

continued to grow at a very healthy rate, with some <strong>soy</strong>food<br />

types (such as <strong>soy</strong><strong>milk</strong>) growing at a truly astonishing<br />

sustained rate–in both the USA <strong>and</strong> western Europe–as the<br />

statistics in this book show so vividly. In 1975 only 75 new<br />

commercial <strong>soy</strong>food products were introduced in the USA,<br />

yet that number skyrocketed to 217 in 1979, reaching an<br />

amazing 422 new products in 1987.<br />

During the decade from 1984 to 1994, Soyfoods <strong>Center</strong><br />

has invested most <strong>of</strong> its time <strong>and</strong> resources in the production<br />

<strong>of</strong> SoyaScan, the world’s largest computerized database on<br />

<strong>soy</strong>foods, which contains more than 44,500 records as <strong>of</strong><br />

Jan. 1994. This database also includes a wealth <strong>of</strong> carefully<br />

researched statistics <strong>and</strong> analyses <strong>of</strong> the <strong>soy</strong>foods market;<br />

those from the start <strong>of</strong> 1985 to the end <strong>of</strong> 1993 are contained<br />

in this book. Its scope includes all known information on this<br />

subject, worldwide. Its focus, however, is statistics, analyses,<br />

<strong>and</strong> trends concerning the <strong>soy</strong>foods industry <strong>and</strong> market in<br />

the United States <strong>and</strong> Europe.<br />

In May 1990 Soyfoods <strong>Center</strong> conducted an in-depth<br />

study <strong>of</strong> the t<strong>of</strong>u market in Europe (137 pages), <strong>and</strong> in July<br />

1990 <strong>of</strong> the <strong>soy</strong><strong>milk</strong> market in Europe (261 pages). All<br />

original interviews <strong>and</strong> published records from both <strong>of</strong> these<br />

market studies, plus a summary <strong>of</strong> each study, are included in<br />

the present book.<br />

The SoyaScan database is composed <strong>of</strong> individual<br />

records. One record might be an original interview with<br />

the head <strong>of</strong> the largest <strong>soy</strong><strong>milk</strong> company in Europe, on the<br />

size <strong>and</strong> growth <strong>of</strong> the <strong>soy</strong><strong>milk</strong> market in Europe, <strong>and</strong> new<br />

trends in that market, conducted by William Shurtleff <strong>of</strong><br />
