Allan Roy Dafoe, The Dionne Quintuplet Guardianship,<br />

Call<strong>and</strong>er, ONT, Canada, Feb. 11. 2 p. Typed, without<br />

• Summary: Dr. Kellogg is sending Dr. Dafoe a box <strong>of</strong><br />

oranges <strong>and</strong> <strong>other</strong> fruits, plus a new table showing the<br />

vitamin content <strong>of</strong> different foods. “I am also sending you a<br />

package <strong>of</strong> <strong>soy</strong> <strong>acidophilus</strong> cheese which resembles cottage<br />

cheese in appearance. It is made from <strong>soy</strong> <strong>acidophilus</strong> <strong>milk</strong><br />

in essentially the same manner in which cottage cheese is<br />

prepared. With the addition <strong>of</strong> thick cream, sweet or sour,<br />

<strong>and</strong> if desired, a little salt, it becomes as palatable as ordinary<br />

cottage cheese <strong>and</strong> has the advantage that it contains a high<br />

percentage <strong>of</strong> Lactobacillus <strong>acidophilus</strong>. A count made today<br />

(February 11) shows 250 billion to the gram. I thought the<br />

quintuplets might like this for a change.<br />

“If you will consult the table you will see that the <strong>soy</strong><br />

bean is a good source for vitamin B <strong>and</strong> also one <strong>of</strong> the best<br />

<strong>of</strong> all known vegetable sources for vitamin G. This gives an<br />

additional value to <strong>soy</strong> <strong>acidophilus</strong> <strong>milk</strong> <strong>and</strong> <strong>other</strong> <strong>soy</strong> bean<br />

• Summary: Pr<strong>of</strong>. Besredka <strong>of</strong> the Pasteur Inst. is a worldfamous<br />

bacteriologist. “I have been much interested in the<br />

work initiated by Metchnik<strong>of</strong>f in relation to changing the<br />

fl ora. I think I have made much more use <strong>of</strong> this principle<br />

than any <strong>other</strong> person. I obtained from Dr. Tissier a culture<br />

<strong>of</strong> his bifi dus... I began quite extensive use <strong>of</strong> the culture<br />

in 1912, <strong>and</strong> between that time <strong>and</strong> 1935 used over a<br />

hundred thous<strong>and</strong> gallons <strong>of</strong> the culture in the treatment <strong>of</strong><br />

my patients at the Battle Creek Sanitarium where we had<br />

annually about 12,000 patients until the late depression<br />

which cut down our patronage about one half, but it is<br />

coming back...<br />

“I have found that the organism grows much more<br />

rapidly in a <strong>milk</strong> prepared from the <strong>soy</strong> bean than in cow’s<br />

<strong>milk</strong>. It seems, in fact, to produce a new type. This new<br />

type, which we call Lactobacillus <strong>soy</strong> <strong>acidophilus</strong>, has been<br />

studied by a number <strong>of</strong> bacteriologists in this country. It<br />

occurred to me that perhaps you might be willing to make<br />

• Summary: “In the absence <strong>of</strong> Dr. Dafoe, who has been<br />

a patient in the Toronto hospital the past two weeks, I am<br />

writing to acknowledge the receipt <strong>of</strong> your two letters <strong>of</strong> Feb.<br />

11th <strong>and</strong> one <strong>of</strong> Feb. 17th. They will receive the Doctor’s<br />

attention on his return home next week.<br />

“Please let me acknowledge receipt, for the doctor, <strong>of</strong><br />

the meltose, <strong>acidophilus</strong> cheese, <strong>and</strong> box <strong>of</strong> fruit which you<br />

kindly sent him recently.”<br />

“The quintuplets, fortunately, had only slight colds for a<br />

few days, from which they have now completely recovered.<br />

Note: The Guardianship now has a new letterhead with<br />

the photo <strong>and</strong> name <strong>of</strong> each baby against the background <strong>of</strong><br />

a maple leaf. Clockwise, their names are Yvonne, Cecile,<br />

Marie, Annette, <strong>and</strong> Emelie [formerly spelled “Emilie”].<br />
