• Summary: One <strong>of</strong> Ted’s next major projects is a Tetra<br />

Pak t<strong>of</strong>u; Morinaga does not have a patent in Europe. Also,<br />

Ted skips two <strong>of</strong> steps in Morinaga’s patent. He intends to<br />

fl ood Europe with an aseptic t<strong>of</strong>u. His fi rm t<strong>of</strong>u will use<br />

ultrafi ltration instead <strong>of</strong> isolates to get the fi rm texture. No<br />

that isolates can also be made using ultrafi ltration, without<br />

hexane solvent. He has used calcium sulfate, which gives a<br />

better fl avor, but it is diffi cult because it is not water soluble.<br />

This is where the Combibloc carton comes in. He can made<br />

J<strong>of</strong>u-style <strong>soy</strong> <strong>yogurt</strong> with whole berries in it in an aseptic<br />

Combibloc carton.<br />

Alfa-Laval is talking with the Chinese about selling<br />

them a plant to make continuous process t<strong>of</strong>u using<br />

ultrafi ltration. A man who works for Alfa-Laval <strong>and</strong> works<br />

with Ted at Trensums has told him this, in confi dence. He<br />

was in China for 6 months setting up Alfa-Laval’s fi rst<br />

plant there. The idea was that when this plant was proved<br />

successful, two additional plants would be installed. Ted does<br />

not think the latter two have been installed yet. He told Ted<br />

about all <strong>of</strong> the problems that Alfa-Laval has been having<br />

there in scaling up pilot plants. This is very confi dential. If it<br />

is true, it could be grounds for a lawsuit.<br />

Ted’s idea for using ultrafi ltration to make an aseptic<br />

t<strong>of</strong>u is partially Luke’s idea. But it also an idea that is tied<br />

in with using a bl<strong>and</strong> <strong>soy</strong> base. For the last 5 years 90%<br />

<strong>of</strong> Ted’s research energy has gone into getting a bl<strong>and</strong> <strong>soy</strong><br />

base. When that is ready he will make an aseptic t<strong>of</strong>u. Ted<br />

could possibly have an aseptic t<strong>of</strong>u packaged in Combibloc<br />

on the market by mid-1989 that would use a combination <strong>of</strong><br />

GDL <strong>and</strong> calcium sulfate coagulants, <strong>and</strong> use ultrafi ltration<br />

Hanson. 1991. Nov. 1 <strong>and</strong> 11. In March 1990 Bountiful Bean<br />

Soyfoods moved from Madison, Wisconsin, to 620 Main<br />

St., Ridgeway, Wisconsin. Richard Kraemer <strong>and</strong> Elizabeth<br />

Hanson began to produce <strong>soy</strong>foods during the last week<br />

in June, renting from the cooperative, then they purchased<br />

the business on 21 Aug. 1991. Richard <strong>and</strong> Elizabeth are<br />

married with a son, are in their late 40s, <strong>and</strong> come from<br />

Oseola, Wisconsin; he is a carpenter (<strong>and</strong> was a pastor) <strong>and</strong><br />

she a nutritionist. They are both very enthusiastic about<br />

t<strong>of</strong>u <strong>and</strong> the business. The co-op has now been changed to<br />

a private business. They work full time <strong>and</strong> they have three<br />

employees–1 full time <strong>and</strong> 2 part time. They are thinking<br />

<strong>of</strong> re-launching tempeh <strong>and</strong> <strong>soy</strong> <strong>yogurt</strong>. The cooperative<br />

got what they felt was a good price for the business. People<br />

who worked more than 6,000 hours (Chris Burant [8 years],<br />

Deborah [almost 10 years], <strong>and</strong> a woman named Solie) each<br />

got a large chunk. An<strong>other</strong> 11 people who had worked in the<br />

past were also given part <strong>of</strong> the money. The smallest amount<br />

<strong>of</strong> money distributed was $250.00. Deborah <strong>and</strong> James<br />

Lubbe are no longer with the company. Bountiful Bean<br />

Soyfoods now makes t<strong>of</strong>u, Herb T<strong>of</strong>u, plain or vanilla <strong>soy</strong><br />

<strong>milk</strong>, Tasty T<strong>of</strong>u, Hummus with T<strong>of</strong>u (<strong>and</strong> garbanzo beans),<br />

<strong>and</strong> Taboolie with T<strong>of</strong>u (salad, which also contains bulgar).<br />

They have discontinued tempeh <strong>and</strong> <strong>soy</strong> <strong>yogurt</strong>.<br />

Kraemer would like to sell Bountiful Bean in Ridgeway <strong>and</strong><br />

Roger is considering buying it. 85% <strong>of</strong> the company’s sales<br />

• Summary: Tomsun Foods fi led for Chapter 11 bankruptcy<br />

last week. This will give the company ‘breathing room’.<br />

Tomsun was hard hit by the October stock market crash,<br />

which dashed plans to acquire additional fi nances. Tomsun<br />

has recently been challenged in its Northeast t<strong>of</strong>u market<br />

by two t<strong>of</strong>u makers from outside the region. Tomsun has<br />

50% <strong>of</strong> that market now but the competition is getting stiff.<br />

Tomsun sold more than $3 million in t<strong>of</strong>u-related products in<br />

1986. During the initial development phase <strong>of</strong> J<strong>of</strong>u, company<br />

reports indicated it operated at a loss <strong>of</strong> more than a half<br />

million dollars. The reports also indicate the fi rm expected<br />

continued losses on the product through March 1987.<br />

The company is meeting its obligations to its 35-to-40<br />

employees, as well as customers <strong>and</strong> shareholders, Tom<br />

Timmins, Tomsun chairman, stressed. Tomsun’s debt is<br />

estimated at more than $1 million. In order to break even,<br />

Tomsun needs to produce 6,000 to 7,000 cases <strong>of</strong> J<strong>of</strong>u a<br />

week. The company is short <strong>of</strong> that goal by about 15%,<br />

Timmins said.<br />
