On the top half <strong>of</strong> the ad is a large circular logo featuring<br />

a stylized swan, with two large wings symmetrical about a<br />

vertical axis <strong>and</strong> an arched neck on the left side. The <strong>other</strong><br />

half <strong>of</strong> the arch is drawn in to form a heart, inside <strong>of</strong> which<br />

is written “Because we love you.” Across the inside top are<br />

the large words “Swan Foods.” A rainbow arches below them<br />

<strong>and</strong> over the swan. At the top center, between the words<br />

“Swan Foods,” are the smaller words “Nature’s Finest”<br />

written one below the <strong>other</strong>; between them is an infi nity sign.<br />

Across the bottom <strong>of</strong> the ad is written: “Every Swan<br />

Soybean Product contains all 8 essential amino acids (which<br />

are necessary for a balanced diet) <strong>and</strong> have no cholesterol.<br />

Note: A full-page Swan Foods ad that is very similar to<br />

his half-page ad was published in the July/August issue <strong>of</strong><br />

this magazine. There are four differences between the two<br />

ads: (1) This November ad is smaller; Swan Foods went out<br />

<strong>of</strong> business one month later, in December 1978; (2) A T<strong>of</strong>u<br />

Salad Dressing <strong>and</strong> Red Zinger tea appear in this ad but not<br />

in the earlier ad; (3) This ad states that Swan Foods’ products<br />

are distributed by Tree <strong>of</strong> Life, Inc., a major distributor,<br />

whereas in July/August they had been “distributed by your<br />

local Natural Foods Distributor”–less impressive. (4) The<br />

following products appear in the earlier (July/August) ad<br />

but do not appear in this one: Soy Shakes (Carob, Vanilla<br />

& Strawberry), three iced herbal beverages (Lemon Mist,<br />

Miami Cooler, Red Quencher), <strong>and</strong> two baked goods &<br />

pastries (Mary’s Cream Cake, <strong>and</strong> Mary’s Devil’s Food<br />

• Summary: Jan. 25-27. International Soya Protein Food<br />

Conference held in Singapore, sponsored by the American<br />

Soybean Association. 400 people from 24 countries<br />

participated.<br />

Jan. Whole Foods magazine starts publication in<br />

Berkeley, California, founded by Steven & Henrietta Haines,<br />

<strong>and</strong> Jim Schreiber. The fi rst issue features an article titled<br />

“Making Money Making T<strong>of</strong>u,” about fi ve t<strong>of</strong>u companies.<br />

Westbrae has a full-page color ad titled “Someday all <strong>of</strong> this<br />

will be as familiar as apple pie,” showing fi ve types <strong>of</strong> miso<br />

plus sea vegetables.<br />

Feb. 17. Laughing Grasshopper t<strong>of</strong>u shop changes its<br />

name to New Engl<strong>and</strong> Soy Dairy, Inc., the fi rst company<br />

to use the term “<strong>soy</strong> dairy” in its name. Also in 1978<br />

White Wave in Boulder, Colorado, publishes a charming<br />

poster announcing, “We’ve got an alternative. White Wave<br />

Soy Dairy.” An illustration shows a man leading his cow,<br />

st<strong>and</strong>ing under a beanstalk, looking in wonder at the seeds,<br />

<strong>soy</strong>beans.<br />

March. The Cow <strong>of</strong> China, America’s third <strong>soy</strong> deli,<br />

run by White Wave, opens in Boulder, Colorado. It is later<br />

renamed Good Belly Deli.<br />

April. Na<strong>soy</strong>a Foods Inc. starts making t<strong>of</strong>u <strong>and</strong> <strong>soy</strong><strong>milk</strong><br />

in Leominster, Massachusetts, inside a former dairy. Founded<br />

by John Paino <strong>and</strong> Robert Bergwall. May. 3. “What is this<br />

Thing Called T<strong>of</strong>u” by Patricia Wells published in The New<br />

York Times.<br />

May 22-25. Keystone Conference on Soy Protein <strong>and</strong><br />

Human Nutrition held in Keystone, Colorado, organized by<br />

Ralston Purina. 105 registrants. The world’s top researchers<br />

on the subject present 34 papers demonstrating a new<br />

scientifi c underst<strong>and</strong>ing <strong>of</strong> the quality <strong>of</strong> <strong>soy</strong> proteins for<br />

human nutrition. The infl uential 406-page proceedings, titled<br />

Soy Protein & Human Nutrition, are published in 1979,<br />

edited by Wilcke, Hopkins, <strong>and</strong> Waggle.<br />

May. The Soy Deli opens at The Soy Plant in Ann Arbor,<br />

Michigan. America’s fourth <strong>soy</strong> deli.<br />

June. Brightsong T<strong>of</strong>u, founded by Joel Brightbill <strong>and</strong><br />

Bob Heartsong, starts making t<strong>of</strong>u in Redwood Valley,<br />

California. Sharon <strong>and</strong> Richard Rose bought the company<br />

in June, 1980 <strong>and</strong> in Nov. 1980 started The Real Food T<strong>of</strong>u<br />

Cafe, a <strong>soy</strong> deli, adjacent to it.<br />

June 26. First Takai catalog <strong>of</strong> t<strong>of</strong>u <strong>and</strong> <strong>soy</strong><strong>milk</strong><br />

equipment published, written by William Shurtleff. The fi rst<br />

publication <strong>of</strong> its type in English, it helps start many new<br />

<strong>soy</strong>foods companies.<br />

July 28-31. First Soycrafters Conference held at The Soy<br />

Plant in Ann Arbor, Michigan. Conceived <strong>and</strong> organized by<br />

Steve Fiering. 75 people attend. The Soycrafters Association<br />

<strong>of</strong> North America (SANA) is founded, with Larry<br />

Needleman as the fi rst president <strong>and</strong> a board <strong>of</strong> directors.<br />

Sept. First issue <strong>of</strong> Soyanews published in Sri Lanka.<br />

Oct. The Farm Vegetarian Cookbook (revised ed.) by<br />

Louise Hagler published by The Farm’s Book Publishing Co.<br />

in Tennessee.<br />

Oct. Morinaga Milk Co. in Japan starts to export their<br />

t<strong>of</strong>u in aseptic Tetra Brik cartons worldwide. They issue a<br />

color recipe booklet to accompany their t<strong>of</strong>u.<br />

Oct. Kendall Food Co. starts to make America’s<br />

earliest known commercial amazake in Brookline Village,<br />

Massachusetts. Amazake is made from koji, as are miso <strong>and</strong><br />

shoyu. Not even in Hawaii was commercial amazake made<br />

before this.<br />

Oct. 29-Nov. 3. World Conference on Vegetable Food<br />

Proteins held in Amsterdam, The Netherl<strong>and</strong>s. More than<br />

1,000 participants. Sponsored by the American Soybean<br />

Assoc. <strong>and</strong> <strong>other</strong>s.<br />

Nov. The T<strong>of</strong>u Shop, America’s fi fth <strong>soy</strong> deli-restaurant,<br />

opened in Rochester, New York, by Greg Weaver. Large <strong>and</strong>
