• Summary: An improved <strong>soy</strong> <strong>yogurt</strong> was prepared from a<br />

base that consisted <strong>of</strong> 22% <strong>soy</strong>bean solids, 4% sucrose, 2%<br />

corn starch, 0.3% sodium citrate <strong>and</strong> water, fermented with<br />

5% active mixed starter culture (Lactobacillus bulgaricus<br />

<strong>and</strong> Streptococcus thermophilus). Comparative sensory<br />

evaluation <strong>of</strong> cow’s <strong>milk</strong> <strong>yogurt</strong> <strong>and</strong> this improved <strong>soy</strong><br />

<strong>yogurt</strong> produced hedonic scores <strong>of</strong> 6.2 <strong>and</strong> 5.9 respectively<br />

(on a scale <strong>of</strong> 9) for overall acceptability; these were not<br />

signifi cantly different. But 73% <strong>of</strong> respondents (in Nigeria)<br />

rejected <strong>soy</strong> <strong>yogurt</strong> as an alternative for <strong>yogurt</strong> made from<br />

Genice Foods Ltd. 1994. Feb. 4 <strong>and</strong> 8. Starting in 1992<br />

Genice started to sell its <strong>soy</strong> <strong>yogurt</strong>s outside the UK. First in<br />

1992 the So Good line <strong>of</strong> <strong>soy</strong> <strong>yogurt</strong>s was launched in Spain<br />

(for Arkady Iberica, an ADM-owned company located in<br />

Barcelona) with the addition <strong>of</strong> two new fl avors–orange <strong>and</strong><br />

natural. In late 1992 the Spaniards requested their own br<strong>and</strong>,<br />

so So Good was changed to Alisana; Four Soya Yogerts (120<br />

gm each) were sold in each pack.<br />

Label (sleeve <strong>and</strong> cup for cherry fl avor) sent by Ray<br />

Pierce. 1994. Feb. 18. This colorful sleeve is 11.25 by 4.5<br />

inches. A color illustration in orange, red, purple, green <strong>and</strong><br />

peach on white shows scattered fruits on a white background.<br />

The lettering, which is blue <strong>and</strong> black, reads “Alisana: 4<br />

Soya Yogerts.” The cup is cherry red <strong>and</strong> blue on white.<br />
