(June 1998 to Jun 1999). During that time, 70% <strong>of</strong> White<br />

Wave’s income came from the natural foods marketplace.<br />

The company predicts that this will drop to 50-60% during<br />

fi scal year 2000 as Silk moves into the mass market.<br />

White Wave’s two plants in Boulder, Colorado, now<br />

have about 43,000 square feet in two locations; the company<br />

cover <strong>of</strong> the portfolio is the attractive front panel label <strong>of</strong><br />

the Peach Kefi r. It contains seven active kefi r cultures:<br />

Streptococcus lactis, Streptococcus cremoris, Streptococcus<br />

diacetylactis, Lactobacillus plantarum, Lactobacillus casei,<br />

Saccharomyces fragilis, Leuconostoc cremoris. Inside is a<br />

leafl et (color photocopy) showing the bottle <strong>and</strong> describing<br />

the product.<br />

Talk with Julie Smolyanski, Director <strong>of</strong> Sales <strong>and</strong><br />

Marketing at Lifeway. The product will fi rst be available<br />

to consumers in stores in the Chicago area late November,<br />

1999. Lifeway is America’s leading supplier <strong>of</strong> kefi r; this<br />

is their area <strong>of</strong> expertise. When they fi rst made <strong>soy</strong> kefi r,<br />

they found it was thicker than they expected, probably<br />

because <strong>soy</strong><strong>milk</strong> has more solids than dairy <strong>milk</strong>. So<br />

they had to adjust the solids content <strong>of</strong> the <strong>soy</strong><strong>milk</strong>. Now<br />

typical American consumers fi nd the <strong>soy</strong> kefi r to be “really<br />

delicious.” Most do not realize it is made from <strong>soy</strong>; they say<br />

it’s like some kind <strong>of</strong> smoothie beverage. Kefi r <strong>and</strong> <strong>other</strong><br />

cultured dairy products are much more widely consumed in<br />

Europe than in America. The average American consumes<br />

4 cups <strong>of</strong> cultured dairy products (mostly <strong>yogurt</strong>) per year,<br />

whereas the average European consumes 28 cups per month!<br />

So 84 times as much! The dairy case in most European food<br />

stores is much bigger (roughly fi ve times as big) as it is in<br />

American stores.<br />
