Soy Acidophilus Milk... It cured them <strong>of</strong> bowel trouble when<br />

they were four months old <strong>and</strong> they have been taking it ever<br />

since in gradually increasing quantities. They began with a<br />

teaspoonful at each feeding. Each one is now taking a pint a<br />

day.”<br />

Street, Boston, Massachusetts, May 16. 6 p. Typed, without<br />

signature (carbon copy).<br />

• Summary: “You inquire with reference to the Hay diet<br />

<strong>and</strong> whether the <strong>soy</strong> <strong>acidophilus</strong> <strong>milk</strong> is a carbohydrate <strong>and</strong><br />

whether it contains protein.” The philosophy on which the<br />

Hay diet rests “that carbohydrates <strong>and</strong> proteins should not be<br />

eaten together is entirely unscientifi c...” A detailed analysis<br />

<strong>of</strong> this fallacy follows. The originator <strong>of</strong> this regimen was not<br />

Dr. Hay, but “a Dr. Tilden <strong>of</strong> Denver [Colorado] many years<br />

ago [20 years before Hay]. He was an advertising doctor <strong>and</strong><br />

employed the late Elbert Hubbard, then a young reporter, as<br />

a publicity agent to create business.”<br />

“I hope that you are adhering closely to the biologic<br />

way <strong>and</strong> that you are prospering as a result. It is evident that<br />

your vital margin has become greatly reduced.” A table (p.<br />

4) compares the composition <strong>of</strong> <strong>soy</strong> <strong>acidophilus</strong> <strong>milk</strong>, cow’s<br />

<strong>milk</strong>, <strong>and</strong> human <strong>milk</strong>. Soy <strong>acidophilus</strong> <strong>milk</strong> “has a little less<br />

carbohydrate that human <strong>milk</strong>, but it resembles human <strong>milk</strong><br />

more closely than cow’s <strong>milk</strong> <strong>and</strong> contains lactic acid, which<br />

<strong>of</strong> course is found in butter<strong>milk</strong> but not in m<strong>other</strong>’s <strong>milk</strong> or<br />

ordinary sweet dairy <strong>milk</strong>.”<br />

Mrs. Mary F. Henderson, author <strong>of</strong> the book titled<br />

“The Aristocracy <strong>of</strong> Health,” has left a legacy to Battle<br />

Creek College. “I have set apart one hundred numbers to be<br />

assigned to persons <strong>of</strong> distinction who are nationally <strong>and</strong><br />

internationally known as leaders in various lines <strong>of</strong> activity<br />

for the promotion <strong>of</strong> human welfare. I should like very much<br />

to put your name down as one <strong>of</strong> the fi rst ten. I should be<br />

glad if you would nominate some prominent person who<br />

you know to be eligible to be one <strong>of</strong> the initial one hundred.<br />

There is no particular prestige connected with this initial<br />

enrollment, but I entertain the hope that Mrs. Henderson’s<br />

dream that the Aristocracy <strong>of</strong> Health might prove to be the<br />

nucleus <strong>of</strong> a group <strong>of</strong> health minded individuals which might<br />

grow in time to be the beginning <strong>of</strong> a new <strong>and</strong> better human<br />

race through biologic living <strong>and</strong> eugenics may be realized...”<br />

• Summary: “Please send half a dozen bottles <strong>of</strong> <strong>soy</strong><br />

<strong>acidophilus</strong> <strong>milk</strong> together with samples <strong>of</strong> our foods we<br />

send to doctors to Dale Carnegie, 27 Wendover Road, Forest<br />

Hills, New York, complimentary.” Address: Battle Creek,<br />

• Summary: “Packed into the tiny <strong>soy</strong>a bean is a wealth<br />

<strong>of</strong> nutrition; minerals, tiny vitamins, easily assimilated<br />

carbohydrates, <strong>and</strong> the greatest hoard <strong>of</strong> proteins that any<br />

food in the vegetable kingdom contains.” Just imagine. “A<br />

vegetable product equal to most, <strong>and</strong> superior to some animal<br />

products in proteins, the body building element in food,<br />

without which there would be no life.”<br />

Unlike meat <strong>and</strong> fi sh, the <strong>soy</strong>bean is one <strong>of</strong> those rare<br />

foods that alkalinize the body. Milk <strong>and</strong> butter made from<br />

<strong>soy</strong>beans are better than their dairy counterparts. Its oil is<br />

equal to the best grade <strong>of</strong> olive oil. It is the world’s leading<br />

source <strong>of</strong> lecithin, <strong>and</strong> the source <strong>of</strong> protein-rich <strong>soy</strong> fl our,<br />

<strong>soy</strong> sauce, roasted <strong>soy</strong>beans, vegetables, cheese, etc. Dr.<br />

Kellogg is making increasing use <strong>of</strong> “<strong>soy</strong> <strong>acidophilus</strong>” [a<br />

type <strong>of</strong> liquid fermented <strong>soy</strong><strong>milk</strong>].<br />

• Summary: Mr. Haughton wrote Dr. Kellogg on Aug. 26<br />

that “One <strong>of</strong> your patients at Battle Creek has advised me<br />

that we should look into Soy Bean as a food.” It is said to be<br />

helpful for intestinal disorders.<br />

Dr. Kellogg replies: “You have been correctly informed.<br />

The <strong>soy</strong>bean is an exceedingly useful food <strong>and</strong> ought to<br />

be widely used. It is on the whole, I believe, the most<br />

remarkable <strong>and</strong> most useful <strong>of</strong> all food products...<br />

“If you will address a letter to W.J. Morse, Bureau <strong>of</strong><br />

Plant Introduction [sic, Plant Industry], U.S. Department<br />

<strong>of</strong> Agriculture, Washington D.C., you will obtain a large<br />

amount <strong>of</strong> literature about the <strong>soy</strong> bean which you will fi nd<br />

very interesting.<br />

“The Battle Creek Food Company makes a number <strong>of</strong><br />

products from the <strong>soy</strong> bean, among which are <strong>soy</strong> gluten<br />

biscuit, which consists <strong>of</strong> equal parts <strong>of</strong> <strong>soy</strong> fl our <strong>and</strong> wheat
