• Summary: Enzymes I <strong>and</strong> II, both serine proteases which<br />

have a high <strong>soy</strong><strong>milk</strong>-curding activity, were produced<br />

from Bacillus species. When purifi ed, they were found to<br />

be homogeneous by polyacrylamide gel electrophoresis<br />

(PAGE) at pH 4.3. Both enzymes gave optimum coagulation<br />

<strong>of</strong> <strong>soy</strong><strong>milk</strong> at 65ºC, were stable at 45ºC, <strong>and</strong> were most<br />

active at pH 5.8. Both were more sensitive to calcium ion<br />

• Summary: A t<strong>of</strong>u brick is coated with a mellow white miso<br />

<strong>and</strong> aged to produce a smooth <strong>and</strong> compact texture after<br />

which the miso is scraped from the brick <strong>and</strong> the brick is<br />

soaked in fresh water to remove the salt. The brick is then<br />

whipped until a creamy texture is achieved. Address: 932<br />

• Summary: Show trends: Many new companies introducing<br />

many new <strong>soy</strong>foods, some very high quality in concept <strong>and</strong><br />

execution. Established <strong>soy</strong> companies now entering such<br />

as Miller Farms <strong>and</strong> Witte/White Wonder. The Soyfoods<br />

Pavilion seemed to have less both space <strong>and</strong> be more spread<br />

out. The only Legume product at the show was the t<strong>of</strong>u<br />

chocolate bar (will the Barat Bar save Legume?). Tomsun<br />

Foods did not have a booth. Ice Bean was the only <strong>soy</strong><br />

frozen dessert there. A proliferation <strong>of</strong> <strong>soy</strong> cheeses, aseptic<br />

<strong>soy</strong><strong>milk</strong>s, glass-packed spreads, meat analogs. Na<strong>soy</strong>a will<br />

be making Simply Natural’s t<strong>of</strong>u/miso spread for them;<br />

it has just been patented. Simply Natural’s t<strong>of</strong>u cheese is<br />

now called Soyalite, <strong>and</strong> their pasta is Pasta Lite. Littleseen<br />

regional companies were there, including Michele’s<br />

<strong>and</strong> Northern Soy. Paul Obis adds: Many at the show were<br />

lamenting the apparent failure <strong>of</strong> J<strong>of</strong>u. They have spent all<br />

their money.<br />

• Summary: Both Barricini <strong>and</strong> Farm Foods (6 families)<br />

moved out <strong>of</strong> New York, where taxes <strong>and</strong> cost <strong>of</strong> living were<br />

too high. They are now 45 miles away in a pretty setting. Ice<br />

Bean is sold to the health food trade <strong>and</strong> T<strong>of</strong>ulite (containing<br />

sugar) to the grocery trade. The <strong>yogurt</strong>, T<strong>of</strong>ulite with Active<br />

Cultures, is a fermented product, but is not yet on the<br />

market. It has sugar added for best taste <strong>and</strong> will be sold to<br />

the grocery trade. Ice Bean may later do a honey sweetened<br />

variety for the health foods trade. T<strong>of</strong>ulite is now available<br />

in bars, the fi rst product expansion <strong>other</strong> than fl avors. Ice<br />

Bean’s Honey Vanilla S<strong>and</strong>wich now outsells any pint fl avor.<br />

Tepper is not certain that Ice Bean was fi rst produced in<br />

1975. [Shurtleff is quite sure it was 1976]. The fi rst invoice<br />
