Underneath the copyright notice, Doris Gardiner has<br />

written “Copyright Jethro Kloss 1935.” She does not recall<br />

where she got that information. No publisher is listed.<br />

Note: Takoma Park is now in Maryl<strong>and</strong>, 6 miles north <strong>of</strong><br />

Washington, DC.<br />

This book is largely about herbs <strong>and</strong> natural healing. It<br />

contains many Biblical quotes.<br />

Soy-related recipes include: Unleavened bread (with<br />

<strong>soy</strong> bean meal, p. 94). Gems (with <strong>soy</strong> bean fl our). Soy bean<br />

bread (5:1 whole wheat fl our to boiled <strong>soy</strong> bean meal, p.<br />

97). Soy bean buns or cinnamon rolls (with <strong>soy</strong>bean meal<br />

<strong>and</strong> <strong>soy</strong>bean <strong>milk</strong>, p. 98). Soy bean cheese (fermented, with<br />

raw peanut butter, <strong>soy</strong> bean <strong>milk</strong>, <strong>and</strong> tomato puree, p. 104).<br />

Nut cheese No. 1 <strong>and</strong> 2 (made with raw peanut butter, water,<br />

<strong>and</strong> salt, p. 105. Can be made from different nuts; tastes<br />

like cream cheese made from whole <strong>milk</strong>). Ice cream (made<br />

#1 <strong>and</strong> #2 (using gluten <strong>and</strong> peanuts, p. 112). Granola #3<br />

(with only whole wheat fl our <strong>and</strong> <strong>soy</strong> bean fl our, p. 116).<br />

Soybean c<strong>of</strong>fee (p. 118). Note that Kloss has no recipes using<br />

whole dry <strong>soy</strong>beans in an unprocessed or unsprouted form.<br />

“Loma Linda Food Company, Loma Linda, California,<br />

Manufacturer <strong>of</strong> Health Foods,” has an ad on p. 189. They<br />

list their products, but no <strong>soy</strong> products are mentioned.<br />

Nature’s Original Food Co. in Muirkirk, Maryl<strong>and</strong>, is listed<br />

on pages 196 <strong>and</strong> 198. They make or sell strictly vegetarian<br />

pure health foods, incl. “Fine grade <strong>soy</strong> bean fl our.”<br />

One interesting section is titled “Aluminum utensils<br />

for cooking purposes” (p. 80-84); Kloss strongly advises<br />

against their use, presenting much convincing but anecdotal<br />

evidence describing health problems that both he <strong>and</strong> <strong>other</strong><br />

people have had after using aluminum cooking utensils. For<br />

example, Kloss bought a tea kettle which was constantly<br />

st<strong>and</strong>ing on the stove with some water in it. He would<br />

drink 2-3 cups <strong>of</strong> this water each morning, then some more<br />

about an hour before dinner. He developed terrible bowel<br />

trouble. He tried all kinds <strong>of</strong> remedies but nothing worked.<br />

The conditions grew steadily worse until fi nally he said to<br />

his wife, “Unless something helps me, I will surely die.”<br />

One day he described his condition to a man, <strong>and</strong> the man<br />

said that the symptoms were similar to those that aluminum<br />

poison would cause. He began to research the subject by<br />

reading various books <strong>and</strong> found that “every one who had<br />

any practical experience in it condemned aluminum cooking<br />

utensils.” Yet Kloss does not say that when he stopped using<br />

aluminum utensils his health problems disappeared. Kloss<br />

then includes a 3-page statement by Dr. Chas. T. Betts <strong>of</strong><br />

Toledo, Ohio, on the dangers <strong>of</strong> using aluminum cooking<br />

utensils. Dr. Betts became very ill soon after his family<br />

began using aluminum cooking utensils. He too investigated<br />

the subject in depth <strong>and</strong> regained his health within 8 weeks<br />

after he stopped using aluminum cooking utensils. He has<br />

enjoyed good health for the past 17 years. While studying<br />

the subject in Washington, DC. he found that the U.S.<br />

government had made a thorough investigation <strong>of</strong> the matter<br />

from 1920 to 1925. The Federal Trade Commission Docket<br />

540 contained more than 4,000 pages <strong>of</strong> closely typewritten<br />

testimony from 158 witnesses during the 5 years, after which<br />

an <strong>of</strong>fi cial report was made by Edward M. Averill. “Many<br />

<strong>of</strong> the witnesses above mentioned were pr<strong>of</strong>essors, deans,<br />

biologists, <strong>and</strong> toxicologists from many colleges, some<br />

<strong>of</strong> which are the highest schools <strong>of</strong> learning in America.”<br />

Averill’s report noted. “The evidence in this record does<br />

not prove that they are harmless... It does prove that there<br />

are substantial grounds upon which to predicate an honest<br />

opinion that they are harmful.”<br />

Doris Gardiner notes (Oct. 1990) that “in the revised<br />

1939 edition <strong>of</strong> Back to Eden, Jethro Kloss eliminated many<br />

Biblical texts. He didn’t want to turn <strong>of</strong>f anyone that was<br />

not religious. He wanted to help everyone.” Kloss moved<br />

to Brooke, Virginia, in 1920. From there, in the early 1930s<br />

(by Sept. 1932), he <strong>and</strong> his family moved to Takoma Park.<br />
