<strong>and</strong> Dutch) <strong>of</strong> a tropical fruit (Passifl ora alata) that has a tart<br />

• Summary: Wildwood fi rst had to deal with this question<br />

in 1981 when they sold their t<strong>of</strong>u & miso s<strong>and</strong>wiches on the<br />

counter <strong>of</strong> natural food stores. Wildwood felt there was no<br />

danger <strong>of</strong> t<strong>of</strong>u spoilage because <strong>of</strong> the miso. They battled<br />

hard against the state health department. They tested t<strong>of</strong>u<br />

with <strong>and</strong> without miso around it at the state’s labs. The<br />

results showed that t<strong>of</strong>u was clearly a potentially hazardous<br />

food. From then on Wildwood insisted that all <strong>of</strong> their t<strong>of</strong>u<br />

<strong>and</strong> t<strong>of</strong>u s<strong>and</strong>wiches be refrigerated below 45ºF. Paul’s<br />

experience is that the average temperature in the produce<br />

case wet rack is 50ºF.<br />

About 3 years ago Wildwood was at a crossroads.<br />

They had three vendor numbers: One <strong>of</strong> produce, one for<br />

grocery/dairy, <strong>and</strong> one for deli. The buyer explained that this<br />

was a mishmash, <strong>and</strong> asked Paul to choose one. He chose<br />

grocery/dairy. Today, in many supermarkets, Wildwood has<br />

18-24 linear feet <strong>of</strong> space in the dairy case <strong>of</strong> high-volume<br />

supermarkets. In Lafayette, Walnut Creek, <strong>and</strong> Orinda<br />

supermarkets they have only 2 feet. Paul usually goes in<br />

<strong>and</strong> says, “I won’t take less than 8 feet.” The goal is one<br />

facing per product. Paul is aware <strong>of</strong> the ongoing turf wars<br />

between supermarket departments. But note that any product<br />

that comes in under produce will have a produce label on it.<br />

Wildwood now has a few <strong>of</strong> its own refrigerated st<strong>and</strong>-up<br />

display cases that contain only Wildwood products, similar<br />

to those pioneered by Quong Hop & Co. The cases are<br />

located between the produce <strong>and</strong> dairy departments in the<br />

store. The name <strong>of</strong> the case is “Wildwood Natural Foods”<br />

with the company logo. It is not limited to <strong>soy</strong>foods, but to<br />

natural vegetarian foods–whatever they distribute. But a <strong>soy</strong><br />

<strong>yogurt</strong> would probably go next to dairy <strong>yogurt</strong>s in the dairy<br />

case. Woody Yeh is still waiting for his cups. Paul thinks<br />

Woody’s <strong>soy</strong> <strong>yogurt</strong> product is excellent. Azumaya sells<br />

its Stir Fruity in the produce case because the company’s
