a major issue in Europe, <strong>and</strong> starting to become one in the<br />

USA. Will “non-GMO <strong>soy</strong>beans” ever become as important<br />

to some consumers as “Organically grown <strong>soy</strong>beans”?<br />

2. What will be the effect <strong>of</strong> the FDA announcement<br />

concerning health claims for <strong>soy</strong>foods on small producers<br />

<strong>of</strong> traditional <strong>soy</strong>foods? Will they benefi t from the claim<br />

without changing their formulations? Should they mentions<br />

“With natural is<strong>of</strong>l avones” on their labels? Should they state<br />

how many grams <strong>of</strong> is<strong>of</strong>l avones per serving. 3. Beware the<br />

dangers <strong>of</strong> the media hype <strong>of</strong> the health benefi ts <strong>of</strong> <strong>soy</strong>foods.<br />

Don’t overdo your own advertising claims. The media may<br />

later start to debunk all the hype. 4. Beware the potential<br />

dangers to the <strong>soy</strong>foods industry <strong>of</strong> concentrated is<strong>of</strong>l avones,<br />

such as the pills made by ADM. These could be marketed<br />

(over the Internet, for example) as pills to give small girls big<br />

breasts.<br />

5. Take advantage <strong>of</strong> the publicity that will be created by<br />

big dairy companies getting into the <strong>soy</strong><strong>milk</strong> market.<br />

6. Lon White’s cardiac research in Hawaii which<br />

indicate that t<strong>of</strong>u consumption is correlated with cognitive<br />

disorders.<br />

• Summary: This is a chain store newspaper (published from<br />

time to time; copyrighted 1998), with this issue devoted to<br />

<strong>soy</strong>foods. It contains ads for many <strong>soy</strong> products sold at the<br />

store, many <strong>of</strong> them on sale. “Soy strategy: 3 New Year’s<br />

resolutions. 1. Get healthy. 2. Lose weight / cut down on bad<br />

fats. 3. Help protect the environment.<br />

A sidebar titled “Cool beans! Top ten reasons to enjoy<br />

<strong>soy</strong>” states: “1. Soy protein helps reduce cholesterol levels,<br />

thereby reducing the risk <strong>of</strong> coronary heart disease, which<br />

accounts for more than 500,000 deaths in the U.S. per year.<br />

“2. The <strong>soy</strong>bean is the only vegetable to <strong>of</strong>fer a complete<br />

protein pr<strong>of</strong>i le, equal to both meat <strong>and</strong> eggs in its protein<br />

content.<br />

“3. As a complete protein, <strong>soy</strong> contains all nine essential<br />

amino acids. (The human body needs twenty amino acids,<br />

only eleven <strong>of</strong> which are produced by our bodies).<br />

“4. Soybeans are higher in essential, healthful fats than<br />

(EFA) content, high vitamin E content <strong>and</strong> no cholesterol.”<br />

There are defi nitions <strong>of</strong> <strong>and</strong> information about: Miso,<br />

shoyu, tamari, t<strong>of</strong>u, tempeh, <strong>soy</strong> <strong>milk</strong>, <strong>soy</strong> <strong>yogurt</strong>, <strong>soy</strong><br />

cheese, <strong>soy</strong> desserts, <strong>soy</strong> oil, <strong>soy</strong> fl our, texturized <strong>soy</strong> protein,<br />

<strong>soy</strong> grits, <strong>soy</strong> nuts, edamame (<strong>soy</strong> in the pod), <strong>and</strong> meat<br />

alternatives.<br />

• Summary: Soy <strong>yogurt</strong> is now a part <strong>of</strong> the ever exp<strong>and</strong>ing<br />

line <strong>of</strong> <strong>soy</strong>foods. Years ago, when you <strong>yogurt</strong> was a rarity, its<br />

fl avor <strong>and</strong> texture were not nearly as good as those <strong>of</strong> dairy<br />

<strong>yogurt</strong>s. But now that has changed, <strong>and</strong> one can fi nd “many<br />

new, different <strong>and</strong> great tasting <strong>soy</strong> <strong>yogurt</strong>s on the market.”<br />

These include WholeSoy Creamy Cultured Soy, White Wave<br />

Silk Dairyless Soy, <strong>and</strong> Galaxy Foods Veggie Yogurt.<br />

Most <strong>soy</strong> <strong>yogurt</strong> is sold in a 6-ounce plastic cup,<br />

whereas dairy <strong>yogurt</strong> is typically sold in 8-ounce cups.<br />

However White Wave Silk Dairyless Soy is also sold in a<br />

32-ounce (1 quart) container.<br />

Soy <strong>yogurt</strong> may cost a few cents more, but they are<br />

“worth the extra money because <strong>of</strong> their tremendous health<br />

benefi ts. And <strong>soy</strong> <strong>yogurt</strong> is certainly a good way to help you<br />

with your goal <strong>of</strong> eating 25 grams <strong>soy</strong> protein daily to lower<br />
