since times immemorial, <strong>and</strong> is called ‘the meat without the<br />

bones,’ as it serves as a food rich in protein.”<br />

“The low basal metabolism <strong>of</strong> the orientals was to a<br />

certain extent attributed to their being vegetarians, <strong>and</strong> the<br />

basal metabolism was accepted as a measure <strong>of</strong> effi ciency<br />

<strong>of</strong> a nation until recent studies showed the basal metabolism<br />

<strong>of</strong> the Maya Indians to be about 5 per cent above that <strong>of</strong> the<br />

white race” (Shattuck & Benedict 1931, p. 518).<br />

“It has been shown that while alkalinization <strong>of</strong> a human<br />

being by the administration <strong>of</strong> sodium salts (bicarbonate<br />

or citrate) is followed by a retention <strong>of</strong> water amounting<br />

to one Kilo [kg] <strong>and</strong> greater perspiration during exercise,<br />

the alkalinization by the corresponding potassium salts<br />

results in a one Kilo loss <strong>of</strong> water by the body <strong>and</strong> a marked<br />

The defi ciency <strong>of</strong> the <strong>soy</strong>bean ash in sodium <strong>and</strong> the large<br />

excess <strong>of</strong> potassium places the <strong>soy</strong>bean in the latter class <strong>of</strong><br />

alkalizing agents.”<br />

ice cream powders, macaroni products, <strong>and</strong> sausages*.<br />

Since sausages containing a substantial amount <strong>of</strong> <strong>soy</strong>a fl our<br />

can be sold at a reduced price, this may provide the packing<br />

industry <strong>of</strong> our country with a means <strong>of</strong> exp<strong>and</strong>ing the
