Food Sci., 18, 3 – 19.A mathematical model describing the evolution of aerobic and anaerobic respiration ofGolden Delicious apples stored in refrigerated and controlled atmosphere, as a function oftemperature, PO 2 and PCO 2 is presented and discussed.
