Para ello se utilizaron 26 animales,obteniéndose de cada uno de ellos 10 muestras con una periodicidad de 12 horas. Los resultados muestranuna evolución descendente a lo largo del tiempo de estudio para la densidad, % de grasa, % de proteína y lacoordenada b* del color, permaneciendo muy estable el pH e incrementado su valor la coordenada L* y a*del color, la conductividad y el porcentaje de lactosa. Asimismo, se valora la relación del color (en particularla coordenada b*) con algunas características físicas y de la composición química de interés, la cual puedeservir para la predicción a través del color de la riqueza en algunos parámetros del calostro, de utilidad en elmanejo que requiera aporte exógeno de calostros a los cabritos, como es el caso de la lactancia artificial y laprevención de ciertas patologías.Palabras clave: color, densidad, cabra, calostro.INTRODUCCIÓNEl calostro, primera secreción de la ubre tras elparto en las hembras de los mamíferos cumplediversas funciones, entre las que destacan el aportede inmunoglobulinas (Ig) en las primeras horas despuésdel nacimiento, el aporte de energía y favorecerla eliminación de los meconios (Brown, 1978,O´Brien y Sherman, 1993). En el caso del ganadocaprino, se ha evaluado cual es la concentraciónsérica de anticuerpos tras la ingestión de los calostrosnecesaria para evitar el síndrome de fallo de latransferencia de la inmunidad pasiva, estimándoseentre 800 y 1200 mg/dl (O´Brien y Sherman 1993,Morand-Fehr, 1984). A este respecto, son múltipleslos factores que afectan la absorción de anticuerpospor los recién nacidos, destacando entre ellos, elvolumen de calostro ingerido, su concentración eninmunoglobulinas (Bainter, 1986, Michanek y Ventorp,1989), el peso al nacimiento (Morand-Fehr,1984) y la hora de la primera ingesta (Michanek yVentrorp, 1989).En el manejo de la lactancia artificial no se recomiendaaportar el calostro directamente de la madre,ya que la rápida vinculación materno-filial (Ramírezet al. 1996) dificultará su posterior adaptación a lastetinas artificiales, lo que conllevará un retraso ensu crecimiento. También, la prevención de ciertaspatologías tales como C.A.E.V., paratuberculosis,mycoplasmosis, etc. (Guerrault,1990) son transmitidaspor esta vía. Ello conduce a que el conocimientode la calidad del calostro sea importante, afin de evitar que se reduzca su actividad inmunizantey energética.Respecto a la determinación de la riqueza en Ig,se ha avanzado mucho, tanto en métodos de laboratorio(Mancini et al. 1965, Fahey y McKelvey,1965), como en estimaciones de campo (Mechor etal. 1992, O´Brien y Sherman, 1993). Por contra lacomposición físico-química del calostro, requierede un aparataje caro y relativamente sofisticado, loque ha provocado que su valoración rápida en granjano se haya desarrollado convenientemente.El paso del calostro a leche es un proceso rápido,evolucionando al mismo ritmo las propiedades
