Ganadero hemos considerado de granimportancia estimar y comparar los principales factoresque condicionan la rentabilidad de la explotación.En esta prueba se intenta cuantificar dos factoresmuy importantes para dicha rentabilidad,dichos factores son la cantidad y la calidad de leche,los cuales determinan los ingresos por venta laleche. Sin embargo no se tienen en cuenta otros quetambién determinan en gran medida el precio de laleche como son la bacteriología, la presencia deinhibidores, etc. puesto que sus variaciones no sonatribuibles al factor raza.Esta experiencia no pretende servir de base paraorientar hacia un tipo de explotación con una razaconcreta puesto que las características de cada productorson diferentes y existen otros muchos factoresque son determinantes a la hora de optar y no estánconsiderados aquí. El único objetivo es constatar siexisten diferencias en cantidad y calidad de la lecheproducida y del queso obtenido con dicha leche ycuantificarlas en la medida que sea posible.MATERIAL Y MÉTODOSLa muestra elegida es un rebaño de 124 ovejas delas cuales 65 son de raza Latxa y 59 son cruce (50% Latxa, 50% Milchschaf). Hemos elegido esterebaño porque el manejo de los animales, sus condicionesambientales y su alimentación es la mismaindependientemente de la raza. De esta forma seintenta reducir al máximo la influencia de todosaquellos factores que no sean la raza.La cantidad de leche producida por cada oveja semidió cada mes de forma alterna (mañana-tarde).Al mismo tiempo que se realizó el control de la producciónse recogieron muestras individuales deleche sobre las cuales se analizó la calidad química(%grasa y %proteína) en el Instituto Lactológico deLekumberri por los procedimientos habituales, conun Milko Scan.Todos los datos obtenidos con las metodologíasanteriormente citadas han sido tratados con el programaestadístico SPSS.RESULTADOS1. CANTIDADPrimero se analizan los resultados de produccióna lo largo de la campaña en las dos razas. Estosdatos están reflejados en la tabla 1. Se trata de losml. de leche obtenidos de media por cada una de lasrazas en cada control.
