Kreder 2805 - 3080 Esperanza, (Argentina).RESUMENSe estudió la influencia del efecto de la adición de los conservantes azidiol y dicromato de potasio y el calentamientoprevio de las muestras sobre la respuesta de los métodos microbiológicos más utilizados en la detecciónde inhibidores (BR Test ® y Delvotest ® ) en muestras de leche de oveja.Para la realización de este trabajo se utilizó un grupo de 48 ovejas de la raza Manchega, que no fueron tratadascon sustancias farmacológica, pertenecientes al rebaño de la granja experimental del Departamento deCiencia Animal (U.P.V.). Las muestras de leche se recogieron con una frecuencia quincenal, de animales individualesen el ordeño de la mañana desde los 15 días después del parto hasta el secado.Las respuestas de muestras analizadas (n= 2238) por el BR-Test ® y el Delvotest ® se evaluaron visualmentecalificando los resultados como negativos, dudosos y positivos.Las muestras conservadas con dicromato de potasio presentaron un elevado porcentaje de casos positivos(87,4% para el BR-Test ® y 94,4% para el Delvotest ® ), lo cual indica la gran interferencia de este conservanteLa frecuencia de casos dudosos para las muestras conservadas con azidiol (9,4 % en el BR-Test ® y 8,6% enel Delvotest) fue superior a la presentada por las muestras sin conservante y sin calentamiento (2,1% y 1,6 %para ambos metodos).El calentamiento, por su parte, resultó significativo para las muestras sin conservante, al disminuir la frecuenciade casos dudosos (desde un 2,1% a un 1,0% para el BR-Test ® y desde un 1,6% a un 1,3% para elDelvotest ® ) y al eliminar completamente los casos positivos (1,6 % para el BR Test ® y 0,8% para el Delvotest® ). El efecto del estado de lactación resultó significativo, obteniéndose una mayor cantidad de casos positivosy dudosos al principio del mismo.Palabras clave: métodos microbiológicos, antibióticos, BR Test ® , Delvotest ® , leche ovina.INTRODUCCIÓNLa presencia en la leche de sustancias antimicrobianas,especialmente antibióticos, puede tenergraves consecuencias tanto desde el punto de vistatoxicológico como tecnológico. El primer aspectose refiere a la salud pública, ya que su presenciapuede producir efectos negativos sobre la saludhumana, provocando perturbaciones pasajeras enla flora intestinal, desarrollo de antibiorresistenciasa las bacterias patógenas y reacciones alérgicasque puede, en casos extremos, llevar a la anafilaxia(Moretain, 1996).Desde el punto de vista tecnológico, la presenciade residuos de antibióticos retrasa e inclusoinhibe completamente los procesos bacterianosimplicados en la elaboración de algunos productoslácteos, como por ejemplo el queso.En España, la leche de oveja se destina casiexclusivamente a la elaboración de quesos, por loque resulta necesario controlar la presencia deinhibidores para disminuir los problemas en lafabricación y aquellos relacionados con su posteriortransmisión al consumidor.Durante los últimos años se han desarrolladodiferentes métodos de análisis para la detección
