Lipases are enzymes that are defined as serine hydrolases and naturally catalyze
the hydrolysis of the ester bond of the tri-, di- and mono-glycerides to produce
free fatty acids and glycerol. However, under thermodynamically favorable
conditions these enzymes catalyze the synthesis of esterification and
transesterification reactions (1). The lipases can be produced by different
microorganisms, being the lipases of yeasts of great interest since they can be
produced by fermentation in liquid. Biodiesel is defined as a mixture of mono
alkyl esters (methyl or ethyl ester) of fatty acids, which is produced by
esterification or transesterification of free acids or acyl-glycerides (2). The
objective of this work was the production of lipases, its scaling and the
immobilization of enzymes for the production of biodiesel.
