EFFECT OF KCl AND MgCl2 ON THE RHEOLOGICAL PROPERTIES OF<br />

AQUEOS SOLUTIONS OF CHAN SEED MUCILAGE<br />

Chan plant (Hyptys suaveolens L) belongs to the family of Lamiaceae and is<br />

widely used due to its chemical constituents, which includes alkaloids, tannins,<br />

saponins, flavonoids and phenols. Seeds contain mucilage composed of D-<br />

glucose and 4-O-methyl-D-glucurinic acid; while, fractionating it with Fehlings<br />

solution, acid and neutral polysaccharides are obtained. From our previous<br />

research, mucilage of Chan seed has been extracted and characterized in their<br />

physicochemical and rheological (in aqueous solutions) properties; thus, this<br />

study focused on assessing the rheological properties of this mucilage at<br />

different salts ionic strength (MgCl2 and KCl) as a function of salt and mucilage<br />

concentration. The results showed that the viscosity diminishes when salt is<br />

added even at very low concentrations (1x10 -3 M) independently of mucilage<br />

concentration (0.4, 0.7 and 1 wt. %) and salt type (KCl or MgCl2). At higher salt<br />

concentrations the viscosity increases, exhibiting a maximum value at 0.3 M.<br />

Regardless concentration and type of electrolyte, mucilage solutions behave like<br />

weak gels; similarly, mucilage solutions also exhibited a pseudoplastic, reopéctic<br />

behavior.<br />
