- Las propiedades de sellado y ángulo de contacto de la película activa, características superficiales<br />

importantes en la performance de un material factible de ser empleado en la fabricación de envases, no<br />

mostraron diferencias significativas luego del tratamiento de activación.<br />

- Se estudió la adsorción de lactocina 705 al PE y se determinó que ocurren, simultáneamente, procesos de<br />

adsorción y descomposición parcial de la bacteriocina. Se optimizaron en 30ºC y 60 minutos la temperatura<br />

y el tiempo de operación para la obtención de la película activa. Se obtuvieron las isotermas de adsorción que<br />

responden a una ecuación tipo Langmuir.<br />

En resumen y si bien nisina es la única bacteriocina aprobada al presente como aditivo alimentario, aquí<br />

demostramos la eficacia de otras bacteriocinas para el desarrollo de nuevas estrategias de biopreservación.<br />
