For Thomas Fischer the wines he makes
do not necessarily have to conform to
the bone-dry ‘fränkisch trocken’ paradigm.
In his skilled hands both Bacchus and
Silvaner turn out well in medium-dry to noble
sweet styles. The medium-sweet Bacchus Kabinett,
for instance, is a great example of using
residual sweetness to tease out the typically
spicy varietal aromas. Yet the typical finesse of
the Kabinett style is preserved. Nonetheless,
our Falstaff Tip is a bone-dry wine: Fischer’s
Rödelsee Schlossberg Silvaner shows its Keuper
soil typicity with herbal savour and muscle
– a truly versatile and gastronomic wine.

Water melon and honeydew melon on the nose. On the palate,
the fine sweetness is noticeable at first, followed by
notes of ripe gooseberry and melon. A pleasant density with
good acidity and fine structure. 12 Vol.-%. screwcap, €

A beautiful first impression of melon, yellow apple and white
flowers. On the palate then fine-tuned into a semi-dry manner,
good sweetness-acidity interplay, with the sweetness
lingering more. A juicy, fruity example of Bacchus with a nice

Surprisingly fine nose with tones of pink pepper and lychee.
Then more rose on the palate with a medium body and wellintegrated,
positively perceptible acidity. The flavours remain

Silvaner Auslese
Rich, clear yellow. On the nose beeswax and candied fruits,
passion fruit and dried apricots. On the palate restrained
acidity, noticeable sweetness, pear juice, mango, medium
structure. Orange zest finish, great with sweet pastries.
