With a treasure trove of some of the
best sites in Bernkastel and similar
ones along the entire Mittelmosel,
Stefan Pauly can make full use of these resources,
he’s actually spoilt for choice. The dry
wines in the range he sent us really scored with
powerful generosity, the Kabinetts with their
fine savouriness, his Spätlese with concentration
and his Auslesen with their high-wire act
between power and elegance. The fact that the
“Alte Badstube am Doctorberg” stands out
time and again should not surprise us: nature
endowed this site with similar privilege as the
contiguous and legendary Doctor site.

Fresh bouquet with fine honey sweetness, followed by chrysanthemums
and foliage. Full and rich on the palate, one
senses the high potential, very nicely pronounced supporting

Doctorberg Riesling Auslese Alte Reben
Floral nose of white flowers and fresh hay, mineral, cool and
fragrant with scents of mirabelle plums and rose petals and a
hint of citrus. On the palate a skilful balance between fresh
sweetness and juicy acidity, lightly caramelised sugar and fine
lime zest. Very elegant finish. 8,5 Vol.-%. screwcap, €€€

Clear, light yellow. On the nose ripe citrus fruits, candied orange,
blossom honey, lime, mint, spice and a slight mineral
tensity. On the palate multi-layered fruit, citrus, apricot,
everything highly ripe but elegantly dancing. Long and dense

Doctorberg Riesling Spätlese
Closed on the nose, with slight hints of spicy slate and a
dash of balsamic. On the palate there is powerful extract,
bold and very compact: minerality, acidity and sweetness
are closely integrated. The substantial core has substance
for one or two decades of development.

Pear drops, spicy slate notes and candied lemon peel on
the nose. On the palate there is some texture, intense but
also fine acidity and with a sweetness poised by extract.
Good density and a resolution of tension evolving into ethereal
