Oliver Gabel confidently materializes the
potential of his local terroirs: the soils
in and around Herxheim are characterised
by limestone. Thus, the young winemaker
has put his focus on Pinot-varieties, especially
Weiss- and Spätburgunder. As of 2019, Gabel
has farmed his vineyards organically. He puts
particular importance on the ageing of his
wines in wood, the oldest barrels in his cellar
are 130 years old – and are still used for fermentation
and maturation in his 19th-century cellar.
All the Pinots show tension, spice and nuances
of limestone minerality – as well as Gabel’s
clear hallmark. A strong performance!

Weissburgunder trocken
Yellow blossom on the nose, apple, cider, yellow-fruited hints
and fine wood spice a hint of yeast. Dry on the palate, without
kitsch or cliché Burgundian in impression with Pfalz character.
Powerful, clearly defined outline, shows spice, substance
and depth. Youthful. 13 Vol.-%. cork, €€
relatively lean and tight structure, vivid acidity, prominent
and ripe tannins, spicy fruit on the finish.

91 NV »Blanc de Blancs« brut nature
Nuanced complex nose with fine spiciness, discreet fruit,
yeast notes and a hint of iodine. Lively acid structure, apple
tart hints, juicy citrus fruit. A balanced sparkling wine, fresh,
multi-layered and complemented by a delicate saltiness.

Spätburgunder trocken
Finely woven nose with a hint of wood spice, red cherry, clove
and also anise. Not a bold Pinot. Finely balanced on the palate
with exquisitely chiselled acidity and ripe, textured tannins.
Sour cherry, bay leaf and almond core - elaborate.

Spätburgunder trocken
Lots of cassis on the nose against a spicy wood background,
also beetroot, juniper berry and dark aromas. Complexity in a

Apple and raisins, flowers and floral notes, some wood
spice and yeast. Lean construction, juicy and creamy on
the palate, emphatically dry, ripe and balanced acidity,
chalky mineral spiciness, again apple and white pepper. A
