for the prevalence of Weiss-, Grau and<br />

Spätburgunder and Chardonnay. Be gone<br />

with these strange varieties! The Mosel,<br />

for instance, has founded its world fame<br />

on just one singular variety, Riesling. Likewise,<br />

in Burgundy you only have Pinot Noir<br />

and Chardonnay, let us take this route,<br />

too! This way of thinking has obvious<br />

advantages: a clear profile creates prestige<br />

and this in turn, with a strengthened economic<br />

basis, helps to sharpen the profile<br />

further. The comparison to these paragons,<br />

however, does not really stack up. Even<br />

in the Mosel, Riesling accounts for just<br />

62.2% of plantings (according to DWI figures<br />

from July 2019) while certainly Burgundy<br />

boasts varieties beyond Pinot Noir<br />

and Chardonnay: the historic white variety<br />

Aligoté even has its own AOC (Bouzeron)<br />

in the Côte Chalonnaise. In northern<br />

Burgundy, bordering the Loire valley, both<br />

Sauvignon Blanc und Fié Gris thrive. And<br />

ultimately Beaujolais also forms part of<br />

Burgundy with almost 20,000ha/49,500<br />

acres of Gamay. The sharpest profiling is<br />

not created by imitation but undoubtedly<br />

by expressing the local conditions in their<br />

full glory. Baden thus has every reason<br />

to pursue its geographic, climatic, social<br />

and, partially, also stylistic proximity to<br />

Burgundy. So this, we certainly hope, will<br />

continue to allow space for the delectable<br />

pleasure promise of the local niche.<br />
