Some of the wines made by Matthias
Höfflin feel like they are about to launch
the tastebuds into a bungee jump: they
move along the palate in such a compelling
and exciting fashion, coated in phenolics and
minerally charged. Yet they radiate the meditative
calm of a zen priest at the same time.
The wines oscillate between these twin poles
of energy. They are the expression of intelligent
viticulture that puts nature centre stage.
Matthias Höfflin also manages to produce really
clean, skin-fermented natural wines. This
is why we awarded him with a fourth star.

Quince compote, pickled pear, pepper, smoky notes, dense
nose. Juicy and fruity on the palate, powerfully-built, rich in
extract and with good density and tension; varietally recognisable,
nevertheless individually interpreted, also a mineral
hue. Potential. 14,5 Vol.-%. cork, €€€

Souvignier Gris Landwein trocken
Dried apricot, notes of black tea, herbs, a hint of pepper and apple
peel. On the palate powerful, firm substance, also a little bold,
but dynamic, good extract. The phenolics are nicely embedded in
the texture. A clean, unique wine. 14,5 Vol.-%. cork, €€€

Landwein trocken
On the nose recognisable as an aromatic variety, rose petals,
tea, chamomile, apricot, also sage. Clear cut aromas on the
palate, medium density, juice and depth, fine phenolics, ample
tannin but not too impetuous. Very well vinified.

Spätburgunder Landwein trocken
Cherry fruit, spices, hints of blood orange and bay leaf. Good
acidity on the palate, compact, tight and also dense, exhibiting
adequate respects for the fruit, with tension and traction.
Dry and undisguised with grippy tannins, a nice flow, enormous
tactile minerality. 12 Vol.-%. cork, €€€
